Cowboy Eggs recipe

4 eggs
3 tbsp heavy whipping cream
3 tbsp salted butter
1 tbsp cream cheese
1/4 cup finely chopped onion

Sauté onions in 1 tbsp butter. Grate remaining two tablespoons of butter, along with tablespoon of cream cheese, into bowl and whip with eggs and cream. Pour mixture into cast iron skillet with onions and cook on low heat, gently lifting and separating eggs continuously until they reach desired texture. Remove from heat when fully cooked but still moist.

Top with sour cream and chives, salt and cracked black pepper to taste.
